This authentic Extra Dry Vermouth di Torino is crafted according to the original recipe of the Chazalettes family, who relocated from Savoy to Turin in 1860 and began producing vermouths and spirits in 1876. Rooted in the original 1876 formula, its modern revival is overseen by Giovanni Chazalettes, grandson of the brand’s founder. Francesca Bava, leading the brand’s resurgence, highlights the Extra Dry Vermouth as a key inspiration for restarting production, describing its recipe as “completely different from all other vermouths on the market.”
Made with a high-quality Cortese base, this vermouth features 20 carefully selected herb and spice extracts, including Piemonte alpine Artemisia Absintium, lemon balm, bergamot, juniper, cardamom, winter savory, and bitter orange. Each botanical undergoes individual preparation, with maceration times ranging from a few days to several weeks.
With just 30 grams of sugar per liter—less than Noilly Prat or Dolin—this vermouth is best described as a “super-aromatized wine.” The exceptional base wine shines through, allowing it to be appreciated almost like a fine wine itself. It opens with a bright citrus peel freshness, seamlessly balanced by the roundness of Piedmontese alpine herbs, complemented by juniper and warming spice notes.
