Single site Sauvignon from the Willow (Weide in German) Lake vineyard in the Yarra Valley. Hand‐picked, crushed, foot stomped, basket‐pressed and wild fermented in a mix of old oak and stainless with ten months on lees before bottling. The crisp late season acidity is rounded with judicious malolactic fermentation giving a fresh curd note, and the restrained ripeness shows through with nettle leaf, floral herb and fresh grass.
