Dormilona 'Clayface' Cabernet Sauvignon
Hangs out on skins for five months in amphora, goes back in, comes back out, gets bottled. Brooding, salted plum, brined black olive, dried green herb, black pepper and turned earth scents. Soft in texture with a fine web of tannin coupled to cool acidity. Gentle, broad and open weave in the palate, you wouldn’t say there’s much depth here but the spread is like a fine down quilt being draped everywhere you can taste. It’s really lovely in that way. Enough lacy, grippy tannin to elevate the wine above vin de soif but still has a gulpable feel. Great mojo. 92 points, Mike Bennie, The Wine Front
