“A small amount of Chardonnay from Millers Vineyard in Dixons Creek was set aside to make a very special wine that is not for the conservative. It’s based on a wine from the Jura Region in France where they produce an oxidative style of Chardonnay that relies on the wine ageing in old oak that is never topped up. These wines sometimes develop a special type of yeast that form a veil of Flor yeast on top that keeps it fresh, but imparts a nutty almost sherry character to the wine.
Tasting Notes: The Dappled version is like a rich chardonnay with overt nutty characters on the nose, and the palate is rich with a salty tang, where the complex nutty flavours also show. It’s best enjoyed with a nice piece of Comte or a similar style of cheese.. A great dinner party wine for discussion.” Winemakers Notes
