DescriptionThe production areas are Summonte which is 650 meters above sea level and Montefredane which is 500 meters above sea level. The grape variety is 100% Fiano. The vinification, the grapes are harvested by hand and undergo a strict selection in the cellar, where they are directly pressed. The must is cooled to 8° for 24 hours. Fermentation is always controlled at around 12 – 13° C for 60 days. Aging takes place in stainless steel tanks with frequent batonnages for 10 months. Bottle aging 3 months before release. Typical nose, with peat notes, hay, white flowers and flint. Powerful and mineral.
