Hot damn!! This sneaky little beast is an absolute delight and a magnificent representation of how well Tasmanian sparkling wine can mature.

Tight acidity for a fifteen year old wine, it tastes amazingly fresh with green apple and ripe lemon juice bouncing around and making my mouth water. The autolytic characteristics are there in spades with uncooked pastry dough, blanched and crushed almonds, honeycomb, shortbread biscuits and toasty oak notes. There is still so much life on this wine, white blossoms, white peach and nectarine, crisp green apples and a hint of white currants which sit easily with the more mature flavours and linger long, long after the wine has left the mouth.
